Production of Alpha Amylases - Alpha amylases are the most important group of enzymes, which hydrolyse starch. They are produced and excreted out into the medium by many bacteria and fungi. The constitution of the culture medium and other conditions (e.g. pH and temperature) would vary with the organism utilized.

For industrial production of a amylases, mainly batch fermentation by bacteria (Bacillus subtilis) is utilized.
